This is an absolutely delicious, and healthier, alternative to the creamsicle icepops of your youth. And so easy. It does require an ice-cream maker. If you don’t have one, or you are vegan, try the vegan popsicle version instead.
Ingredients
1/3 cup raw honey
2 cups orange juice
1/4 tsp orange extract
1 tsp vanilla extract
2 cups organic raw cream or whole milk
2 cups whole milk yoghurt
Method
Mix honey and orange juice together over low heat until somewhat concentrated. Add the extracts. Mix the cream or milk and yogurt. Then blend both combinations together. Pour into your ice-cream maker. This is a delicious, refreshing, and nostalgic treat for a summer day without an of the added synthetic food coloring, preservatives, or low-quality dairy typical of many ice creams.
This recipe appeared in the cookbook: Don’t Cook the Planet by Emily Abrams. Thanks Emily for including me in such a fun (and important) cookbook project.
